Savoring Tianqiao for an Intangible Heritage on the Tongue: The Sweet Legacy of Composite Brown Sugar

Hu Shuangyan: Making composite brown sugar involves five steps, among which the selection of ingredients is the most crucial part. For making Huming Yueqi Brown Sugar, for instance, we carefully choose high-quality sugarcane brown sugar as the raw material, based on which we use professional utensils to grind the brown sugar, Yunnan small yellow ginger, Xinjiang Hotan dates, and Dong'e Ejiao into powder, and then weigh them according to the proportions of the old formula. The brown sugar is the foundation, the ginger and dates are the soul, and the Ejiao is the finishing touch. A bit more would make it too strong, while a bit less would make it too bland. Then we mix it evenly, bag it, and seal it. That's how it's made.

Voiceover: The development of composite brown sugar craftsmanship can be traced back to the 1920s. The first-generation inheritor, Hu Guoqing, learned and improved the production technique in his youth. He later set up a stall in Dawang Township (now renamed Daqiao Town, Tianqiao District), thus beginning the inheritance of this skill. In 1999, the operation moved from street-side carts into a factory, and the Jinan Daminghu Sugar Industry Foodstuff Factory was established. It was the first enterprise in China to categorize brown sugar into specialized types and develop its nutritional properties. In 2001, the factory successively developed a series of nutritional sugar products such as Yimu Brown Sugar, Ejiao Brown Sugar, and Ginger Powder Brown Sugar. These products filled a gap in the domestic market for functional nutritional sugars. In 2003, its several products, including Ejiao Brown Sugar, won the Gold Award at the 4th China National Food Expo. Furthermore, Yimu Brown Sugar and Ejiao Brown Sugar obtained national invention patents (2003-2023), giving this old craft new confidence.

Hu Shuangyan: Through decades of development, we have always maintained our original principle of"quality first" and reject any additives in our products. We now have dozens of products, including Daminghu Ejiao Brown Sugar, Yueqi Brown Sugar, and Daminghu Ginger Decoction.
